Looking to spice up breakfast with some fun creations? Try out Chicken and Waffles on a Stick with your favorite Kickerfeast flavor! For this recipe we used beet, but you can use any Kickerfeast in this recipe.
- 2 Boneless Chicken Breast
- 2 cups of Kickerfeast Waffle Mix
- 1/2 cup of Flour
- 1 cup of Panko Bread crumbs
- 1 Egg
- Salt & Pepper
- 1 Cup of Vegetable Oil
Cut the chicken breast into 1 1/2 inch bite size pieces.
In 3 different mixing bowls, mix 1/2 cup of flour with salt & pepper to taste. In another mixing bowl, add 1 egg and a tablespoon of water and whisk. In the 3rd different bowl add 1 cup of Panko bread crumbs.
Take the pieces of chicken and toss them in the flour bowl. Next gently press the coated chicken into the egg mixture. Finally coat the chicken pieces in Panko bread crumbs.
Heat 1 cup of Vegetable Oil on Medium-High Heat. Cook the chicken pieces until it has a golden brown color (about 8 minutes).
In a bowl, measure 1 cup of mix, 2/3 cup of water, 1tbsp of oil. Whisk until smooth. Let batter rest for one minute, until thickened.
Pre-heat and pre-grease your waffle iron.
Pour batter on the heated, greased waffle iron. Cook until the waffle is no longer steaming.
Cut the Kickerfeast Waffle into 4ths. On a skewer add your waffle and chicken bites, alternating with each.
That's all there is to it. Serve with Syrup for dipping. And Enjoy!
